It’s rare to find a baker who’s so passionate and confident about his daily bakes, yet humble enough to welcome constructive feedback so he can do better the next time. That was my impression of Juwanda Hashim when I visited The Fabulous Baker Boy in Singapore two weeks back.
Ambitious, I know
I met with my friends over coffee and cakes, and found the space cosy and brightly lit. We were looking at Juwanda’s selection of cakes on display when he made some recommendations. After a few pleasantries exchanged, I ended with three large slices of his specialty cakes – Big Lub’s Carrot Cake, Blueberry Lemon Yoghurt and Ms Celine Dion. An ambitious attempt given how I was rather stuffed from the hotpot earlier that afternoon.
Big Lub’s Carrot Cake
Carrot cake is one of my favourite cakes to eat but it’s becoming more difficult to find a good one these days. The Fabulous Baker Boy’s version features this classic treat with a twist, by adding coconut and cranberries to give the cake a different texture. The layers between is made using sour cream, vanilla and cream cheese frosting, which adds a luscious feel to the already rich and moist Big Lub’s Carrot Cake.
Blueberry Lemon Yoghurt
The Blueberry Lemon Yoghurt may sound “light” but what you get is forkfuls of fluffy and incredibly moist Greek Yoghurt sponge, with layers of cream cheese and Swiss Meringue butter cream with wild blueberry jam. This is rich in its own way yet light enough to make the perfect after meal treat.
Ms CELINE DION
And then we have Ms CELINE DION, as though the first two aren’t enough haha! This cake is THE cake to get if you’re planning to go all out and do that whole #screwdiet shenanigan. Valrhona whilte chocolate and macadamia sponge with Valrhona white chocolate buttercream, this cake is dream. You also get bits of fresh raspberries and raspberry compote to sweeten the deal.
Flat White
Croque Monsieur
Coffee isn’t much to shout about but remember – you’re here for the cakes. My friend had the Croque Monsieur which looked quite decent; I didn’t try it so I can’t comment. Overall, I like the cakes and the ambiance is good. Service is efficient and if you’re lucky, Juwanda will tell you about his cakes personally.
