Prior to lunch, I also had my pre-dinner drinks and breakfast at Sky on 57. This restaurant no doubt, boasts the best view of Singapore and the al-fresco area – although not recommended on a humid day – allows one to savour the magnificent view of Singapore’s skyline.
I’m a sucker for crisp and fruity white wines. The San Valentin Torres 2011 was just that, with hints of pear. Also delicious were the signature cocktails (S$18 each) – Raspberry & Nutmeg Martini, Mango Tango and Pink Gin Asiana.
We also tried some popular bar snacks – Wok-fried Australian beef short ribs in salt & pepper (S$25), wok-fried US Kurobuta pork fillet in black pepper sauce (S$20), sautéed king prawn with chilli sauce Singapore style (S$49) and croque monsieur (S$22).
The pork fillet was really tasty – fork tender and well-coated with pepper sauce. I think the beef short ribs paired best with the white wine I had while the Croque Monsieur was a decadent version of ham and cheese sandwich.
I think the ideal thing to do here is have your drinks and cocktail outside while watching the sunset, and adjourn inside for dinner. For a better view of the skyline, you can ask them for binoculars.
We got to know Tamir Shanel, Vice President of the food and beverage operation at Marina Bay Sands, a little better over breakfast and a glass red wine the next day. The Cabernet Petit Verdot is an exclusive blend of Marina Bay Sands, by Pirramimma Wines. This medium bodied wine boasted plum, currant and spicy notes with a subtle oak-y finish.
Mr Shanel spoke about the food concepts, celebrity restaurants, hotel and operations of Marina Bay Sands. He let us in on a little secret – they are bringing in a Michelin-star Asian chef to join the ranks of Marina Bay Sands’ repertoire of celebrity chefs.
As he spoke, baskets of freshly baked breads and pastries were passed around the table followed by a tray of beautifully arranged fruits.
My eggs benedict tasted as beautiful as they looked. I had a spoon of Chef Justin’s Laksa from Eiling, and it was delicious. This tasted like a cross between Katong laksa and Malaccan Nyonya Laksa. I almost regretted ordering my eggs. Almost.
